Elotes
Mexican seasoned corn
Ingredients
- 4 cups frozen corn
- 1 Tablespoon butter
- 2 Tablespoons mayonnaise
- 2 Tablespoons crema mexicana
- 1 1/2 teaspoons cayenne
- 1 1/2 teaspoons chile powder
- 1/2 cup cilantro, minced
- 2/3 cup cotija cheese, cubed
- 2 Tablespoons lime juice
- Salt, to taste
Directions
Heat a skillet over medium-high heat, then add the butter. Once the foaming subsides, add the corn and roast 8 - 15 minutes, tossing occasionally to get all sides. Remove from the heat and add the rest of the ingredients. Mix well, and add salt to taste.
