Mitmita
Ingredients
- 20 grams dried hot red chiles, such as Thai chiles (or 2 heaped teaspoons ground cayenne)
- 1 Tablespoon salt
- 1 1/2 teaspoons ajowan seeds
- 1 teaspoon dried koseret
- 3/4 teaspoon nigella seeds
Directions
In an electric spice grinder, grind all the ingredients together. Pass through a sieve and grind again to a fine, even powder. Store in an airtight container in a dry, cool place.
